Vanilla Essence vs Vanilla Extract: What Is the Difference?

Most Indian kitchens have a small bottle of vanilla essence in the cupboard. Most recipes from bakers and chefs ask for vanilla extract. They sound like the same thing, but they are made in very different ways, and they do not taste the same in a finished cake.
This guide explains the difference between vanilla essence and vanilla extract, when each one makes sense, and how to swap one for the other.
What is vanilla essence?
Vanilla essence is usually a flavouring made to taste like vanilla. In most bottles sold in India, the vanilla flavour comes from vanillin that is produced in a factory, mixed with water, a carrier liquid and often colour.

You can check this on the label. If the ingredients say “artificial flavouring substances” or “nature-identical flavouring”, the bottle has little or no real vanilla bean in it.
Essence has one clear advantage: it is cheap and easy to find. That is why it became the default in home baking.
What is vanilla extract?
Vanilla extract is made from real vanilla beans. Cured vanilla pods are soaked for weeks so that their flavour moves into the liquid. Nothing has to be added to make it taste like vanilla, because the taste comes from the bean itself.

A real vanilla bean carries hundreds of flavour compounds, not only vanillin. That is why extract tastes rounder and warmer, with a light floral and caramel note that essence does not have.

Which one for which recipe?
Use vanilla extract when vanilla is the star. Vanilla sponge cake, custard, ice cream, kulfi, panna cotta, cheesecake, buttercream and milkshakes all taste clearly better with real vanilla, because there is nothing else to hide behind.

Essence is fine when vanilla is in the background. In a chocolate cake, a spiced cookie or a heavily flavoured dessert, vanilla only supports the other flavours, so the gap is smaller.
For no-bake desserts, extract matters most. In cold desserts the flavour is not changed by heat, so you taste exactly what you put in.
Can you swap one for the other?
Yes. If a recipe asks for vanilla essence and you are using regular vanilla extract, use the same amount.
A concentrated extract needs less. Our 5-fold vanilla extract is five times the strength of a single-fold extract, so start with about one-fifth of what the recipe says and adjust to taste. A few drops are enough for a glass of milkshake or a cup of coffee.
Is vanilla extract worth the higher price?
A bottle of extract costs more than a bottle of essence, but you use very little each time. With a 5-fold extract, a 50g bottle lasts through many cakes and desserts.
If you bake for family now and then, one bottle of real extract will last for months. If you bake to sell, real vanilla is one of the easiest ways to make your cakes and desserts stand apart.
How to check if your vanilla is real
- Read the ingredients. Real extract lists vanilla beans. Essence lists flavouring substances.
- Look at the colour. Real extract is a natural brown. A very dark or perfectly clear liquid usually means added colour or factory-made vanillin.
- Smell it. Real vanilla smells warm and soft. Essence smells sharp and very sweet.
- Check the price. Vanilla beans are one of the most expensive spices in the world. A very cheap bottle cannot contain much real vanilla.
Other ways to get real vanilla flavour
Extract is the easiest, but it is not the only option.
- Vanilla bean pods: split the pod and scrape the seeds into custards, ice cream and syrups.
- Vanilla bean paste: thick, with visible vanilla seeds, good for ice cream and frosting.
- Vanilla powder: dry, so it suits coffee, dry mixes and cookies.
